1. Preheat the oven to Gas mark 4-5, 180-190˚C, 350-375˚F.
2. Take the flat piece of belly, dry the rind and score deeply with a sharp knife. Rub the rind all over with Chinese five spice, oil and salt. Line a shallow roasting pad with foil and place the pork onto the foil and tuck around the joint.
3. Open roast for 2 hours. When cooked, allow the pork to rest for 10 minutes before serving.
4. The apple sauce; place all ingredients into a small pan with lid. Simmer with lid on for about 10 minutes until the cooking apples are fluffy. Mix well together and put to one side.
Eat… Serve the pork cut into think chunks with the apple sauce, roasted vegetables and creamy mash potato.
Tip… Make use of the oven while it is on and roast your root vegetables at the same time - they will need about 45 minutes.
